White Tea

White tea is the least processed of the tea types, picked and dried with almost nothing done in between, which is why it stays so pale in the cup. Kept in a bag rather than loose, this certified organic leaf gives a light, honeyed infusion with a whisper of sweetness and no astringency at all. It suits the middle of the afternoon. Because the leaf is delicate it is brewed below the boil, and a bag will give a second cup at nearly full strength if it is not thrown out too quickly.
