Peppermint Rock Cocktail

This Peppermint Rock Cocktail recipe, inspired by Marisa from @whats.marisa.drinking is a refreshingly smooth tipple and tastes exactly like a minty candy cane. Serve this Nerada peppermint tea and vodka concoction over mounds of ice and garnish with candy canes and fresh mint for some festive fun!

Ingredients:

  • 60 mL vodka
  • 30 mL fresh lime juice
  • 20 mL Peppermint Tea Syrup
  • Ice
  • Mint and Cucumber Tonic
  • Candy Cane or Fresh Mint to garnish

For the peppermint syrup*

  • 2 cups water
  • 2 peppermint tea bags
  • 2 cups sugar

Method:

  1. To make the syrup, bring the water to a boil in a small saucepan, add the peppermint tea bags and steep for 3 minutes. Remove the tea bags and add the sugar, stirring until it dissolves. Allow to cool before using.
  2. Combine all vodka, lime juice, cooled syrup and ice into a cocktail shaker. Shake vigorously to combine then pour into prepared glass. Top with Mint and Cucumber tonic and garnish with candy cane or fresh mint.*This will make more than you need, but will store easily in the fridge for two weeks so you can enjoy another round of this yummy festive tipple.
